In traditional hot desiccation cells close and water leaks out of plants only after the cell membrane has disintegrated.

On the contrary, in cold drying cells remain “open” and water comes out naturally without breaking the cell membrane, thus preserving the aroma, flavour, colour and scent typical of fresh plants.
